DOMAINE DE LA CRAS, Bourgogne Montre Cul 2017

Pinot Noir planted in 1983 and 2001 on clay-limestone soil. The vineyards have been treated with biodynamic practices when Marc arrived. The wine is fermented with 70% stem-inclusion in the method of carbonic maceration. Elevage lasts for 15 months in used oak barrels. Annual production is 900 bottles

 

Domaine de la Cras is a 160 hectare property located just outside of the city of Dijon. In 2013, the city purchased the site and put out a tender to find a young, energised and experienced winemaker who would farm the plot organically and act as custodian to the city's new acquisition.

 

It was Marc Soyard who was chosen. He had experience making wine at some of the great Domaines, most notably the famed Domaine Bizot in Vosne Romanée where he worked for six years, both in the vineyard and in the cellar alongside Jean-Yves Bizot, before launching this operation.

 

He makes wine with the same philosophy used at Bizot - a more natural approach utilising plenty of whole bunch and wild ferments.
